I just finished my daily ritual of reading my favorite blogs, and was inspired by today’s post from the lovely & talented interior designer Jessica Kelly.
In celebration of Valentine’s Day, here is a sample menu for tonight that is healthy and festive.
Cocktail
Champagne & Strawberries
Strawberries are high in vitamin C, and according to Richard Gere in Pretty Woman; help bring out the flavour of the champagne…groovy.
Salad
Red Beet Salad with Blue Cheese & Toasted Walnuts in a Balsamic Vinaigrette
Red beets are a rich source of antioxidants, vitamin C & minerals, and walnuts are a great vegetarian source of Omega-3s.
Main
Roasted Cherry Tomato whole wheat Pasta paired with Pinot Noir
Tomatoes are high in lycopene (a potent antioxidant), and retain their nutritional value when cooked, roasted or sundried.
Red wine is also high in antioxidants.
Dessert
Cappuccino Frozen Yogurt with fresh Raspberries and Red Rooibos Tea
Raspberries are high in antioxidants, fibre, vitamin C, B vitamins & minerals. Red tea has no caffeine, is high in antioxidants and aids in digestion (the perfect way to end a meal).
