Ottawa, Jamaica, Toronto, Barbados…

Sorry for the break in blog posts, but life has been quite busy since we got back from South America! Here’s a little update…

We got back from Santiago on Thursday, March 29th, and left the next day for Ottawa to see the in-laws and our puppy Fisher. It was so good to see everyone, but so hard to say goodbye again.

We got back on Monday, April 2nd from the weekend, and left for Jamaica on the 4th for my little sister’s wedding! The wedding was perfect, and it was one of my favorite vacations to date.

The resort (Couples Negril) was beautiful, and the food was fabulous.

It’s important for me to stay active while on vacation, and there was no shortage of activities at this resort. They had a little gym that we went to a couple times, we jogged on the beach, took tennis lessons, went snorkeling and tried the stand-up paddle boards (so good for your core!).

The food was so fresh, and there were plenty of healthy options to choose from.

On most days my breakfast consisted of fresh tropical fruit, make-your-own cereal (raw oats, pumpkin seeds, sunflower seeds, walnuts, shredded coconut, raisins, prunes & low fat milk), plain yogurt with Bran Flakes, and Jamaican Blue Mountain coffee – delish.

Try making your own cereal at home, and avoid buying pre-made cereal that is usually way too high in sugar & processed ingredients. Go to your local bulk store, buy the ingredients above & combine. Store the mixture in a sealed container and just add milk when you’re ready to eat. You can also add fresh fruit (bananas, berries, etc) and omega-3-rich hemp & flax seeds (make sure to store your hemp & flax seeds in the fridge otherwise they will go rancid).

I also tried the fresh whole-wheat waffles topped with plain yogurt & maple syrup, smoked salmon, and scrambled eggs.

Lunch & dinner usually consisted of salad bar, roast veggies and of course – fresh, local fish (snapper, bass, salmon, shrimp & scallops).

While I stuck to the healthy options for most of my meals, I was on vacation, and definitely indulged in some of my favourites: croissants (chocolate & plain), beef patties, ice cream, mojitos, champagne and white wine.

I was sad to say good-bye to Jamaica, but it turns out we will be back in the Caribbean in no time. John’s business is taking him to one of our favourite places in the whole world – Barbados. It holds a special place in our heart as we were engaged & married there. We are excited to go back, and live the island life for a while. We plan to take surf lessons, play tennis, run on the beach, swim and take advantage of the local produce & fresh fish. Stay tuned!
