Sorry for the break in posts, but I’ve been busy! I have 2 months to go in my pregnancy, and have been busy getting everything ready for the arrival of our little one.
When people are busy I often find the first thing to go out the window is healthy eating. The fact is, if healthy eating is a priority for you (which it should be!) it does require some planning, but it’s all about fitting it into your routine.

Part of my meal planning routine is to check out Pinterest a few times a week. Lately it’s been while I’m in the waiting room at my OB, but you can check it while on the bus or train to work, waiting in line at the grocery store or on your lunch break (using the Pinterest app).
When I come across a good meal or snack idea, I pin it to my boards. But than I take it a step further. It’s easy to forget about great recipes that we come across while surfing the net, so if I come across one that I know I want to try, I add it to my grocery list/meal ideas list in the notes section on my iPhone.
On Saturday or Sunday morning when I do my meal planning for the week, I look at my list of meal ideas, choose the ones I want to try depending on what I’m up to that week, and than jot down what ingredients I’ll need.
Here’s a simple, healthy recipe that made it on my list of meal ideas for next week that would make a great side dish for a roast chicken or pan-roasted cod:
Oven Roasted Cauliflower with Garlic, Olive Oil and Lemon Juice
For this recipe, the only modification I would make is to substitute the olive oil for grapeseed or avocado oil as they have higher burning temperatures.
The fact is, living a healthy lifestyle requires some extra effort: fitting exercise into your already busy day, making time to plan & make healthy meals, or having healthy snacks readily available. But, it’s possible; it’s all about figuring out a way that works for you and your routine.
