I can’t believe it’s the long weekend in August already! This is my fave long weekend of the summer for a few reasons: it’s my birthday, we’re usually up at the cottage or camping, and I’m always with family & friends.
When it’s beautiful outside the last thing we all want to do is spend time inside cooking, but in our family, food is a huge part of gathering and celebrating. The challenge: healthy, delicious food that doesn’t take forever to prepare. If you don’t have a meal plan already, I thought I would share our long weekend menu ideas with you!
Saturday Lunch:
BBQ’d chicken breasts with Costco’s Kale Salad
Saturday Dinner:
Healthy Pulled Pork with Healthy Coleslaw and Corn on the Cob
Healthy peanut butter cookies for dessert
Sunday Breakfast:
Eggs, Plain Greek Yogurt with Whole Wheat Granola, Sprouted Toast and Fruit
Sunday Lunch:
Leftover Pulled Pork and Salad
Sunday Dinner:
Beef Tenderloin, Sweet Potato Fries, BBQ’d Cauliflower and Salad
Frozen Yogurt
Monday Breakfast:
Healthy Belgian Waffles with Greek Yogurt, Blueberries and Real Maple Syrup
Monday Lunch:
Leftover Beef with Salad
Monday Dinner:
Chicken Drumsticks, Zucchini Noodle Pasta Salad and Costco Kale Salad and Healthy Vegan Key Lime Pie Bites
A key lime pie is usually my go-to choice for my birthday cake, but this year I stumbled across a healthier version than the store-bought option. They were easy to make, and no baking required!
