It’s Bueno to Keep it Simple

Sometimes I get so caught up in spices, sauces and side dishes that I forget about simple food & flavours.

We had a busy day yesterday, and all of sudden it was 7pm and we had to throw dinner together. We have access to a sweet bbq on the farm, so we decided to grill up some chicken breasts, zucchini and red peppers. So simple, but so good.

Zucchini is low in calories, and high in folic acid (B vitamin) and vitamin A, and red peppers are one of the highest veggies in vitamin C. I’ve been eating more animal protein than usual, but the meat here is local & free-from hormones & antibiotics so I don’t feel so bad. And chicken is a great source of B vitamins, iron, zinc and protein. Make sure to keep your portion to 4 oz or about the size of a deck of cards.

We marinated the chicken & veg in some extra virgin olive oil, and seasoned with salt & pepper.


20 minutes on the grill.


Top the veggies with some balsamic vinegar, and voila – a healthy, easy, yummy dinner!
