Summer Weekends and Healthy Waffles

I hate to say it, but summer weekends are coming to an end. This weekend is supposed to be gorgeous weather, and I’m going to enjoy our last weekend at the cottage to the fullest. Here are a few pictures from my summer weekends, and a healthy, easy, yummy waffle recipe that you must make this Sunday for brunch – you won’t be sorry. Have a great weekend!

Spelt Banana Waffles

Ingredients
(Makes 2 Belgian waffles or 8 single waffles)
1 cup unsweetened almond milk (or milk of choice)
1 tsp vanilla
1 egg
1/4 cup coconut oil, melted (or oil of choice)
1 cup spelt flour
2 tsp baking powder
pinch sea salt
1 banana diced
waffle iron
Blue Menu canola oil cooking spray

Method

Preheat the waffle iron on medium high heat.

Mix the wet ingredients together in a bowl, and slowly whisk in the flour, baking powder & salt. Stir in chopped banana and mix well to combine.

Spray the waffle iron with cooking spray.

Ladle a large spoonful of batter onto the middle of the waffle iron and cook for about 2 minutes on each side (be careful not to put too much batter on the iron or it will overflow).

Remove 1st batch from waffle iron (put in 170F oven to keep warm) and repeat for 2nd batch.

Top waffles with Greek yogurt, blueberries, whole wheat granola and real maple syrup or honey. Enjoy!
