I can’t believe it’s officially summer already! This time of year always makes me crave fresh, cooling foods, and as I mentioned in my last post; lately it’s all about foods that are easy to prepare, and healthy.
The other day I looked around my kitchen, and threw together an easy quinoa salad that is all of those things: fresh, easy, healthy and tastes great. There’s something about the combination of cucumber and mint that screams summer.
I added some leftover chicken to mine, but it’s optional because quinoa is a complete protein – enjoy!
Easy Summer Quinoa Salad
Ingredients
1-cup quinoa (2 cups cooked)
Half English cucumber, diced
1 bell pepper, diced
1-cup feta cheese, crumbled
1 avocado, diced
2 chicken breasts, chopped (optional)
1 cup fresh mint, chopped
Dressing:
4 tbsp. extra virgin olive oil
2 tbsp. white balsamic vinegar
2 tbsp. real maple syrup
Method
Prepare quinoa according to package instructions.
Chop veggies & mint, and whisk together dressing ingredients.
Once quinoa has cooled, combine with chopped veggies, mint, feta & chicken and drizzle with dressing. Toss to combine (add more dressing as needed, but don’t use all of it – save the rest in your fridge for other salads).
